Banoffee and Marshmallow Cake

Ok, I’ll admit, this isn’t a very healthy recipe, but then you have to treat yourself once in a while don’t you!! Below is a recipe to make a fantastic tasting banoffee and marshmallow cake. I’m sure you’ll enjoy it as much as me.

This recipe should take around 30 min preparation and 50 min cooking time.

Ingredients

3 bananas, 165g butter, 165g brown sugar, 325g self raising flour, 4 eggs, 4 tablespoons of milk, 1 tablespoon of baking powder, 1 tablespoon of cinnamon, 300ml double cream, 50g marshmallows, 450g jar of caramel

Process

1. Pre heat the oven to 190C (gas mark 5). Add the butter and sugar to a bowl and mix together until you have a smooth paste. In another bowl add the flour, cinnamon and baking powder and mix together.

2. Start cracking the eggs into the butter and sugar paste adding a tablespoon of the flour / cimmamon / baking powder mixture with each egg. Once all the eggs are well mixed in add the milk and the remaining flour mixture and stir together well.

3. Create a banana paste. Do this by taking two of the bananas and putting them in a bowl. The use a potato masher to mash the bananas, or if you prefer use an electric mixer. Add this banana paste to the other mixture and again, mix together well.

4. Rub some butter around the bottom and sides of a 21cm cake tin and spoon in the cake mixture. Make sure you have an even surface, and then put it in the oven. You’ll need it to bake for 40-50 minutes, but keep checking it with the “fork test” – i.e. stick a fork or knife into the centre of the cake and if it comes out without an mixture stuck to it you can be confident it’s baked well.

5. When the cake is baked well enough turn the oven off and leave it to stand. Once most of the heat has gone take it out the tin and leave to stand on a wire cake rack to cool fully.

6. To make the filling whip the cream until it stiffens. Cut the remaining banana into tiny chunks and add to the cream. Do the same with the marshmallow and add – giving you a banana and marshmallow cream.

7. Almost done… Now cut the sponge into three equal slices. This is best done with a bread knife. On the first layer spoon on a load of caramel from the tin, make sure it’s even, and then do the same with the cream mix. Put the second slice of cake on like a sandwich and again, spoon on some caramel and cream. Add the final slice of the cake and pour on the remaining caramel and cream, and if you have any marshmallows left decorate with these. You might also like to grate some chocolate or something over the top if you have any. And now the only thing left to do is to sample your handy work!
