YOUR RECIPE INGREDIENTS

1 pound of eggplant, sliced to inch thick

5 tbsp of flour

1 teaspoon of salt

2 tablespoons of vegetable oil (any type of oil will do)

4 tablespoons (1/2 stick) of butter or margarine

1 pounds of chicken liver, washed, cut

1 medium onion, thinly sliced tsp of finely chopped basil

1 can of chicken broth, condensed 2 tomatoes, ripe, peeled, cut

2 tbsp of chopped parsley

PREPARE THE DISH

Blend 3 tbsp of salt and flour Coat the eggplant with the mix and set aside on a platter

In a fairly large frying pan, combine oil and two tablespoons of butter and saute eggplant for about 3 minutes or until proper “doneness” of the eggplant is reached

Take one of your serving plates and group the pan-fried eggplant pieces with overlapping sides

Set eggplant aside

In same pan, add what’s left of the butter and saute onions and chicken livers until brown and cooked.

This can take just about six minutes to cook.

Add remaining flour and scatter with chopped basil leaf

Add broth and let cook further

Keep on medium heat until your mixture boils. This will take around 1 minute

Add tomatoes and cover

Lower heat and let it simmer for about five minutes

For serving, place the liver mix in the center of the eggplants and you are now ready to sit and eat.
