How To Cook Roasted Vegetable Soup

Gather all the vegetables you chose, peel if needed and wash them off. Some of the best vegetables to pick are the same ones that you’d normally pick out and use when you’re making a roast meat dish. There are a lot of root vegetables to choose from, some of them are going to be: potatoes, pumpkin, sweet potatoes, carrots, yams, onion, turnips, parsnips and whole garlic gloves. Anything else you like or can think of, pick and choose to your flavor. You can even roast celery and zucchini too. Make sure that you pick out and prepare enough vegetables to fill the large roasting pan into the roasting sized pieces.
After that you’ll want to coat the vegetables with some oil, salt and pepper. A little goes a long way. Roast the vegetables in a hot oven until they’re very well done. A very easy to follow vegetable recipe thus far, isn’t it?
Next you can transfer the roasted vegetables into a larger pot and put some of the stock in. Carefully process the vegetables into a smooth consistency through use of either a handheld processor or blender. Continue adding both stock and some water until the soup gets to a consistency that you like. Don’t go too crazy with the liquids. Can always add more, can’t take it away. Add some additional salt and pepper if you think it needs it. At this point all you need is some additional warming and you’re ready to eat.
Get some thick fresh bread slices for serving along with some dipping olive oil and balsamic vinegar. Consider eating with a nice bottle of wine. Consider chopping some fine parsley and adding a dollop of sour cream. This isn’t just going to be the easiest vegetable recipe you’ll make but also one of the tastiest you’ll be sure to enjoy time and time again.
