Lemon and Herb Pasta – Simple Recipe

Encouraging toddlers and preschoolers to eat their vegetables can be a challenge. Here are some of the ways we have hidden vegetables into fairly common, kid-friendly meals and side dishes, even into smoothies!

So let’s give the lentil-loathers a second chance. It’s time to give lentils a make-over, a PR spin, a new lease of life. Here then, are two fantastic lentil recipes that will convert even the most stubborn of critics into fans. 1. Mild or spicy: Lentil Dahl 2. New Year’s Eve Classic: Lentils and Pork 1. Mild or spicy: Lentil Dahl (adapted from Madhur Jaffrey) The quantities in this recipe give a fairly gloopy dahl, which you can eat with naan bread and rice. Use more spices if you prefer stronger flavours, and adjust the amount of liquid to get the consistency you like.

Directions: 1. In a small bowl, dissolve the yeast in the warm water for 10 minutes. 2. In a 2 quart glass or plastic container, combine 1 cup flour and 1 cup sugar. Use a whisk to mix thoroughly. 3. Slowly add warm milk and dissolved yeast mixture to the flour/sugar combo. Cover the mixture with a towel. 4. Plan on stirring the starter every day and feeding the starter every 5 days. When you feed it, add 1 cup each of flour, sugar and milk.

Heat the oil in a frying pan. Get the spices measured out and ready, as they’re going to go in the oil in quick succession, and briefly. When the oil is hot, add the cumin seeds. A few seconds later, add the coriander and the cayenne pepper. Stir once, then pour this aromatic oil into the lentils. Serve with fresh coriander. 2. New Year’s Eve Classic: Lentils and Pork Italians sometimes see in the New Year with lentils and sausages. The lentils are said to represent wealth. So fill your plate and digest your riches. 500g good quality pork sausages 350 g green or brown lentils (Puy or Castelluccio if possible) one large onion, finely chopped 2 large carrots, finely chopped 2 sticks celery, finely chopped 2 garlic cloves, finely chopped 1 small dried red chilli (remove the seeds) finely chopped A tin of tomatoes A handful of herbs such as sage and rosemary Salt and black pepper

For a sweet gift, consider wrapping up a loaf of the bread with a recipe card and giving it to a friend. I prefer this method to handing someone a Ziploc bag of starter and a xeroxed copy of a recipe. If a friend asks for starter — sourdough or sweet — I happily hand it over. I think, however, that someone has to be ready to have a starter in their lives. It’s kind of like giving someone a puppy. Did you want a puppy? No? Well, now what do you do? Sharing a starter is fun, but more fun is making a wonderful quick bread. Enjoy!
