Making Tasty Lemon Cupcakes Out of Poppy Seeds

To make this tempting dessert, you will need a salt, baking powder, baking soda, yoghurt, all purpose flour, blue poppy seeds, vanilla extract, zest of lemon, softened butter, and sugar. To come up with an icing to make it perfect, you must have an icing sugar and lemon juice or water.

What you need to do first is to prepare the moldings by greasing them properly. Have the oven preheated under the temperature of 400 degrees Fahrenheit r 200 degrees Celsius. While preheating the oven, carefully mix butter and sugar using a stand mixer in about 3 minutes until the mixture becomes light and creamy. Continue mixing while adding the eggs one at a time with a gap of one minute in each addition.

After all the eggs have been added, you may then throw in the lemon zest and the vanilla extract. You may then follow on adding the blue poppy seeds directly into the mixture. On a separate bowl, whisk together the dry ingredients. After several minutes of mixing the wet ones, you may then lower the speed and carefully add the dry ingredients and the yoghurt alternately in a 3 parts flour and 2 parts yoghurt and in a way that you start and end with the flour.

Once you get finished with the mixture, you may then pour it into the prepared moulds and then securely have them evened out to the top. You may now bake them into the oven for about 18 to 20 minutes. You can also determine if the muffins are already fully baked when a thin knife comes out clean. Once you have confirmed this, you can now have the baked muffins taken out of their moldings and then have a 5 minute cool down. The cooling factor is important before you start adding the icing on top to avoid melting the icing as it will look differently.

But to make the icing, you will mix the lemon juice along with the icing sugar until it gets moist. You may add some of the said ingredients when needed with an interval until you have reached the needed texture. The appropriate texture of the icing is creamy and white which is the absolute tasty topping for your muffins. And there you go, the healthiest and tastiest thing you can go for a dessert or snack.
