Marvelous Marbled Eggs

I worked in my parents’ restaurant until I finished high school. As the older kid in the family, I waited on tables and served tea and coffee to customers. Working in a restaurant, I noticed many customers automatically add salt and pepper to food without sampling. I thought it was unusual to see customers add salt and pepper to their tea. Now I know there are many ways to use tea, especially in cooking.

Are you looking for a simple recipe? Here is an old Chinese recipe with an update ingredients. Put 6 eggs in water and bring it to boiled. After the water boiled, reduce heat and simmer eggs for 10 minutes. In another pan, use 4 servings of your favorite black tea and 3 cups of water. Prepare your tea as usual and discard the tea leaves. Add 2 tablespoons of soy sauce to the tea, maybe some salt and pepper if you’d like. Once the eggs are cooked, roll them on the counter to crack the egg shells. Do not peel the egg shells. Simmer eggs in tea for 10 minutes. Let it cool and refrigerate for 8 hours or overnight. The eggs can be serve now, hot or cold.

You can use a Deviled Egg recipe with the egg yolks or try this recipe using crab meat.This is a delicious recipe for the egg yolks. Cut eggs in halves and remove the egg yolks. With the egg yolks, add 6 ounces of crab meat and 6 tablespoons of mayonnaise. Add diced pickled ginger, half teaspoon of rice wine vinegar, salt and pepper to flavor it. Put a spoonful of this crab meat on the egg halves. Garnish with cilantro.

This can be a method to color Easter eggs. As a matter of fact, my daughter decided to color Easter Eggs using this technique. By using food coloring, we made many marvelous marble eggs during Easter Holiday.
