Mexican Appetizers Recipe for Authentic Quesadillas
Mexican foodies love to say that authentic Mexican recipes like these quesadillas specifically may just be the easiest, most simple Mexican appetizers recipe I have ever come across in Mexican cuisine. Quesadillas are essentially Mexico’s version of the American favorite that are grilled cheese sandwiches– only we’re substituting corn tortillas in place of the bread, in order to bind our sandwich!
Quesadillas are often seen as a simple snack you can make quickly, and even as a quick dinner if you’re up for making a bunch of them, when you are really tired and you don?t have the energy for whipping up a big meal from that Mexican cookbook you have on the shelf. So without further delay, here we are:

Ingredients you’ll need for this (serves four people):
about 200 grams of manchego cheese eight corn tortillas plus a Mexican salsa (like verde or roja), or salsa fresca or a guacamole dip–something extra to slather on and give these some extra flavor
Directions for making these:
Begin by heating a cast iron pan on the stove.
Take your cheese and cut it into 8 evenly sized pieces.
Now prepare your favorite salsa (I’ve recommended a few above, in the ingredients list).
Warm up the tortillas one at a time, and as each is starting to heat up, add a bit of manchego cheese to it, and then fold it in half so you’re left with a semi-circular tortilla sandwich of cheese, essentially, and just allow it to heat up enough so that the manchego melts and you’re left with a delicious quesadilla.
Remove from pan and finish by topping with your chosen salsa, and then devour the deliciousness that is one of the most basic and easy to make authentic Mexican recipes from the easy real, authentic Mexican appetizers area of the Mexican cusisine.
Mexican quesadillas are insanely easy to cook and they work great as a little snack you can prepare and in a very small period of time, great for serving to your unexpected dinner guests who managed to pop by without an invitation or for making for little kids as a little three o’clock snack if they’re into Mexican food and would like authentic Mexican recipe appetizers.
