Warm muffins go perfectly with an evening tea party. They’re straightforward to make and just as easy to eat. In fact, many people say that they prefer to eat muffins than cakes when in a rush during tea time as it is more convenient to eat. One of the most famous banana bread recipe is this one as the key ingredient is a nutritious fruit. Here’s a yummy coffee-banana bread muffin recipe which you can prepare at home in practically no time.

What you need:

- Ripe and mashed bananas – three to four

- Softened butter – third of a cup

- Sugar – three-quarters of a cup

- Egg – 1

- Vanilla essence – 1 teaspoon

- Espresso – one tablespoon

- Flour – one and a half (1 1/2) cups

- Chopped walnuts – one cup

- Baking powder – 1 teaspoon

To prepare:

- Heat the oven to 350F.

- This recipe caters for 12 muffins; hence, grease and flour 12 muffin molds.

- In a mixing bowl, break in the egg and beat till fluffy.

- Add the sugar and mix using a wooden spoon.

- Add the mashed bananas and softened butter and mix using a wooden spoon until the mix is well incorporated.

- Whisk in the vanilla essence and espresso and mix all the ingredients well.

- In another bowl, mix together the flour, walnuts and baking powder.

- Sprinkle the dry ingredients over the top of the wet ingredients and mix well to make a smooth batter.

- Pour the batter in the muffin molds (fill only three-quarters (3/4) of the way).

- Bake in the heated oven for twenty-five (25) to thirty (30) minutes ’til the muffins are ready. You can check by inserting a toothpick or skewer; if it comes out clean then the muffins are ready.

- Cool for approximately 10 minutes before removing from the mold, then cool on a cooling rack.

Browned Butter Frosting

What you’ll need:

- Butter – 1/3 cup

- Confectioners’ sugar – 3 cups

- Vanilla extract – one (1) teaspoon

- Milk – four tablespoons

Instructions:

- Heat the butter in a pan over a low heat until just browned.

- Take off the heat and cool.

- Add the confectioners’ sugar, vanilla and milk to the butter and beat well to get to a spreading consistency.

- Spread over the cooled muffins, decorate the top with chopped bananas and cool some more before serving.

- You can also put the frosting in a piping bag and pipe it in any design you like on the muffins.

Passionfruit Glace Icing

What you will need:

- Icing sugar – 1 cup

- Passionfruit pulp – one and a half cups

Preparation:

- Whisk the icing sugar and passionfruit pulp in a mixing bowl.

- Gently drizzle over the baked muffins and cool for some time before serving.
