#1 – Gajar Ka Halwa
Ingredients
· Red carrots – 1 kg
· Ghee – 3 to 4 tablespoon
· Sugar – ½ cup
· Milk – 1 liter
· Raisins – a few
· Cashew nut – as required
Preparation
1. Grate the carrots and put it in a pan.
2.{ Add milk then boil with a medium heat, stir regularly. Boil in milk with a medium heat and stir regularly.}
3. When the milk is soaked add sugar and ghee.
4. Cook for another 5 minutes.
6. Add dry fruits, nuts and serve.
#2 – Falooda
Ingredients
· Milk – 2 cup
· Dried Falooda Sev – handfull
· Rose water – 2 teaspoon
· Basil seeds – 1 tablespoon
· Ice cream – Strawberry or Vanilla
· Water – 2 cups
Preparation
1. Soak Basil seeds in water for 1 hour.
2. Drain the remaining water out after boiling Falooda sev for 15 minutes.
3. Boil it again in 1 cup of milk on slow heat for 10 minutes.
4. Add Rose water, Basil seeds and milk together with some ice after it has cool down.
5. Top it with ice cream and serve.
#3 – Kulfi
Ingredients
· Milk – 1 liter
· Sugar – ½ cup
· Cardamom powder – ½ teaspoon
· Almonds (grind) – 6
· Pistachio (slice) – 6
· Saffron strands – 6
· Rose water – 2 teaspoon
Preparation
1. Boil the milk and stir until its quantity reduces to half and becomes thick.
2. After adding all the other ingredients cook and stir with medium heat for another 5 minutes until the sugar is completely dissolve.
3. Pour into moulds and freeze it for 6 hours.
4. Best serve chilled Kulfi with Falooda.
